Oh dear oh dear oh dear …. a while ago as you may remember I promised to furnish you with a few recipes for some amazing tapas dishes … and actually left you high and dry with only one !! I do apologise .. life has truly and honestly just run away from me …. but hopefully the storm has passed and calm can restored once more in the house of Juju ! So here I am to very quickly give you one more recipe to add to your tapas collection …. before I head off again to do some very exciting product testing for various companies … (watch this space …)
So firstly , this next dish was an absolute triumph in my opinion … unbelieveably simple and packed full of spanish charm and the flavours of the med …. I think if I had had the foresight to have made a hot salsa this would have gone amazingly with it …
Goats Cheese & Serrano Ham Empanadillas
1 tbsp spanish olive oil
1 small onion , chopped
1 garlic clove , crushed
150g soft goats cheese
175g serrano ham , finely chopped
1/2 tsp sweet smoked spanish paprika
500g ready made puff pastry (Im still perfecting the pastry art … ahem)
plain flour .. for dusting
1 egg , beaten (for glazing)
Preheat oven 200 degrees/Gas Mark 6
Grease 2 large baking trays/or line with greaseproof paper
Heat the oil in a large fring pan , add the onion and cook over a medium heat stirring occasionally for 5 mins until softened but not brown. Add the garlic and cook , stirring , for 30 secs.
In a seperate bowl put the goats cheese and the ham .. mix together and then mix in the paprika .Add the onion mixture then season to taste and mix well.
Roll out the pastry thinly on a lightly floured surface .. using an 8 ” cutter , cut out 32 rounds .
Using a teaspoon , put an equal amount of cheesy mixture into the middle of each pastry round. dampen the edges of each round and fold them over to create 32 crescent moon shapes parcels. Pinck the edges together then press down with a fork to create a seal. Put all the rounds on the baking try.
With a sharp knife make a small slit in the top of each crescent . Then brush each empanadilla with a little beaten egg .
Bake for 15 mins and serve warm ……….. DELICIOUS !!!
I made a full 32 for 3 people and we polished off the lot … Just as good cold as hot to be perfectly honest … and perfect for a picnic !!!!!!!
