Great Bloggers Bake Off Week 3 : Desserts

I sat and watched with bated breath … wine in hand .. pen and notebook at the ready … The Great British bake Off was on  ( granted I watched it at 11pm on Tuesday  instead of the correct time … Unfortunately the kids were being ratbags … )  Ok .. so desserts …

Eeeeeek ! I’m a trifle kind of girl it’s fair to say .. a bit wobbly below with a strong constitution and a whipsy airy fairy dreamy topping !! Yep .. Just call me Trifle Girl .. so it would have been just plain wrong for me to do anything other than trifle for my week 3 entry into #thegreatbloggersbakeoff !!

So here it is …

Chocolate , caramel & strawberry BAKED Trifle ( Yep … BAKED !!!!) 

I kg Strawberries , hulled 

1 tbsp caster sugar

Sponges :

225g butter , softened

225g caster suagr

225g SR Flour

2 tsp baking powder

4  medium eggs , room temp

1 heaped tbsp cocoa powder

Pastry:

300g plain flour 

150g butter , unsalted (chilled)

50g caster sugar

2 eggs , beaten

3 tbsp milk

Custard:

8 egg YOLKS

75g caster sugar

1tsp vanilla extract 

500ml double cream

1 tin of caramel ( find it by the condensed milk .) I used My Secret Kitchen Maple Caramel Sauce ( Once tried NEVER forgetten .. available at http://www.mysecretkitchen.co.uk)

Topping:

300ml double cream 

1 tsp vanilla extract

3 tbsp Icing sugar

Grated choc , hundreds & thousands .. anything you want to decorate the top with !!

Preaheat the oven to 180 degrees.

Grease and line 2  x 8 ” sandwich tins .

Sponge: Beat all the ingredients except the cocoa powder until combined. Now split the mixture into two. In one half mix in the cocoa powder. pour the batter into the prepared tins and bake for 25 mins. Remove from oven and set aside to go completely cold on a wire rack.

Pastry: Put the flour and butter in the bowl and using the rubbing in method rub until the mixture is breadcrumby . Stir in the sugar and pour in half of the beaten egg cutting it into the mixture with a blunt knife . Add the milk a little at a time until a dough forms. Wrap your dough in clingfilm and pop in the fridge for 30 mins.

On a lightly floured surface roll out the dough and line a 9″ pie dish . Prick the base of the pastry with a fork .Chill again for 10 mins.

Now line the pastry case with crumpled greaseproof and fill with baking beans , lentils , rice .. whatever you prefer to use ! ( I used lentils after finding a 4 year out of date bag in the cupboard ..oops ) bake for 20 mins. Remove the paper & its filling, brush the pastry with the leftover egg and bake again for 5 mins. Turn the oven down to 150 degrees. Trim off any overhanging pastry.

Custard: combine the egg yolks , cream , vanilla & sugar in a bowl . Leave to one side .

Lightly mash the strawberries in a bowl. then strain through a sieve .. add the sugar and leave to one side . Reserve the juice.

Now the magic happens …..

Level off your cakes if need be … then cut each sponge in half (horizontally) so you now have 4 sponges !

In the base of your pastry case put a tabsp of caremel and top with 1 cm of strawberries .. then add a chocolate sponge poour over the custard until it is soaked into the sponge. Now add caramel and strawberries as before and place a plain sponge on the top and repeat until all the sponge , custard, strawberries and caramel are gone. Finish with your final sponge layer. Bake in the oven for 40 minutes until the custard is set but still has a fine and satisfying wobble !!!

Take out the oven and pour the reserved starwberry juice over the sponge ! Leave to cool in the tin ( I did mine in a pie dish …. ) Once cold remove from the tin if you wish and put on a serving plate !

Topping : Combine all the ingredients and whip until sft peaks form . Using a palette knife spread all over the sponge .. then decorate as you wish 🙂

Now this has taken some organisational skills and quite a bit of time … so sit back and CHOW DOWN !!!! This Trifle is a showstopper if ever I tasted one !!!! 

I hope you try this  as laborious as it sounds it’s well worth the effort ( Not that my kids were impressed .. blummin heathens the lof of ’em !!!) I will make this again for a party … DEFINITELY !!!!

  1. well i have never heard of a baked trifle before – this is inspired! but a lot of work Julia – and your fussy bu88ers didnt eat it??? shame on them! i would love to try a slice to rather than have to imagine how it tastes. thank you for putting in so much effort! and for linking up x
