I’ve been lucky enough to be given enough apples to feed a small family for over a month and so I’ve been a busy little apple fairy …peeling , coring , slicing , peeling coring , slicing ,peeling, coring, slicing , peeling coriiiiing, slicin……………zzzzzzzzzzzzzzzzzzzzzzzzzz !!! I’ve made apple & plum chutney , spicy apple chutney , victorian apple jam ( two ways) , apple sauce. apple cake . apple tarts   and apple cinnamon jam ….. I’ve also made .. … Drum roll please… TOFFEE APPLE JAM !!!  The idea of a crunchy (yep!!!) creamy caramel sauce cutting through the soft jelly of a sweet yet sharp jam  actually made me weep with joy … so I jolly well went ahead and did it …. Here’s how …..

Firstly sterilise your jars .. this quantity made 4 jars of caramel sauce plus  6 jars of jam ….

To sterilise your jars …. rinse them in hot soapy water  then pop them in the oven at 160 degrees for 20-30 minutes !

Caramel Sauce

  • 500g caster sugar
  • 300ml pot double cream
  • 100g butter

Put the sugar in a heavy bottomed pan … Add 4 tbsp  of cold water and place on a medium heat until all the sugar is dissolved. Turn up the heat and allow the sugar  to bubble for around 5 minutes until you have caramel ! take off the heat and carefully stir in the cream and butter . Now decant into your jars .. allow to cool slightly then have a spoonful ( and just melt !!)

Apple Jam

  • 1.3 kg sharp cooking apples
  • 1.1 kg sugar
  • 550ml of water
  • 1lemons (juice and rind only)
  • 5 cloves
  • 1 cinnamon stick

Peel, core and slice the apples. Put the sliced apples into a large heavy based pan with the water, cinnamon stick, cloves, lemon juice and rind, and simmer until the apples are tender. Add the sugar, stir whilst it is coming to the boil, and boil hard for 10 minutes, then test for ‘jelly’. Continue to boil until the jam sets and is firm when placed on a cold saucer. Remove the cinnamon stick and cloves ….. and now the fun begins

Take your sterilised jars .. add a layer of caramel then spoon a layer of hot jam on top .. continue until all your jars are full and all your caramel & jam is gone ! Now distribute to all your friends and family who will love you forever !!!!

    • Thanks Erin. How about making the jam now (so as not to waste the apples) and then making the caramel closer to christmas and assembling the toffee apple jam for Christmas x You could also make the jam in the recipe and add a teaspoon of ground cinnamon to make apple cinnamon jam x
