Throughout November & December I’ve decided I shall amaze and enthrall you all with some fabulous Christmas Food recipes … None too taxing ( This is me afterall ) but all deliciously wintery , festive and perfect for the busy bees amongst us at this , the busiest time of the year !!
So today when I received a pot of Organic Mixed Spice from Steenbergs to help with my Great Bloggers Bake Off baking ( Oh yes … the programme may be over .. but us at GBBO continue to improve , try out and enjoy the camaraderie of the Great Bloggers Bake Off )
I decided to kick off my Christmas Food series with a Spiced Christmas Loaf ( To be fair .. you can eat this anytime not just Christmas but believe me the aroma of the spices will bring Christmas into your kitchen everytime you bake this loaf …)
Spiced Christmas Loaf
450g Strong white flour
Pinch of Salt
2 tsp Mixed Spice
115g Unsalted Butter , chilled and diced
7g easy blend yeast ( approx 1 oz .. or you can buy 7g sachets)
115g caster sugar
50g mixed peel
1 egg , beaten
150ml warmed milk
Put the flour , salt and mixed spice in a large bowl .. add the butter and rub it into the flour ubtil the mixture resembles breadcrumbs.
Stir in the yeast , sugar , fruit and peel then add the egg and the warm milk ( a bit at a time ) and bring together until you have a soft dough.
Knead the dough briefly on a lightly floured surface and transfer it to a clean floured bowl. Cover with cling film and leave in a warm place to prove for 2 hours.
Preheat the oven to 180 degrees and oil a 2lb loaf tin . Remove the dough and again knead briefly on a lightly floured surface. Place the dough in the prepared tin and place in a warm place for approximately 30 minutes for a second proving.
Bake for 1hr 10 minutes until the loaf is golden & well risen ! leave to cool in the tin.
Now grab some butter to spread thickly on your bread and a mug of hot chocolate .. or a glass of mulled wine … Taste Christmas !!! You’re welcome ….
