Christmas Food : White Chocolate & Cranberry Fudge

I love fudge .. there , I said it ! I absolutely love fudge .. from plain & simple vanilla … to mint chocolate  … to triple super duper caramal flump fudge ( Ok I made that up .. but its worth a try …)  so  felt I couldn’t do a Christmas Food series without revealing my absolutely simpler than simple fudge recipe !! It’s perfect to give as gifts .. or just to sit and enjoy whilst snuggling in front of your favourite Christmas movie !! There is a fudge revolution out there …. let’s get on it …

Today I offer you a very Christmassy White Chocolate & Cranberry Fudge 

300g White chocolate

200 ml sweetened condensed milk ( Thats about half a tin .. )

2 tsps vanilla extract

90g chopped dried cranberries

Firstly line your tin with greaseproof paper ( tin should be 6″ squared)

Put the chocolate , condensed milk and vanilla in a heavy bottomed pan over a medium heat. Stir them together until the chocolate has melted ( take care as white chocolate is a beggar for burning)

Add your chopped cranberries and stir well .

Pour your mixture into your prepared tine and smooth the top with the back of a metal spoon.

Pop the tin in the fridge for 3-4 hours.

Remove the fudge from the tin using the greasproof paper . turn it out onto a board and cut the slab into squares ! You should get at least 16 decent sized fudge squares from this .

Now either eat it and melt into a heap of fudgey heaven or pack in pretty bags , tie with ribbons and give to friends for the perfect Christmas gift !!

Variations ( A few ideas) :

Chocolate & Pistachio Fudge : Swap the white choc for dark choc & the cranberries for unsalted pistachios

Coffee & Orange Chocolate Fudge : Swap the white Choc for dark choc , grate in the zest of 1 lg orange and add a teaspoon full of espresso coffee powder … ( take out the cranberries)

Chocolate Mint Fudge  : Swap the white choc for dark choc & swap the cranberries for 30g of well crushed peppermints ( Extra strong mints )
