Healthy & Yummy Sweet Potato Curry


I was recently asked to come up with a fab and easy family meal … well this is one of my favourites .. quick , easy and healthy !!! You can’t go wrong !! I make this for us as a midweek  meal when I seriously cannot be bothered to stand in the kitchen cooking for ages after a busy day at work … It’s so easy  even the husband can make it !! Here goes …

Sweet Potato Curry

300ml vegetable stock

750g sweet potatoes, peeled and cut into bite sized chunks

100g frozen peas

1 onion , thinly sliced

225 g fresh spinach leaves

2 garlic cloves , thinly sliced

1 red chili , thinly sliced ( deseed it if you like .. I don’t bother as we like a KICK )

1 tbsp curry powder ( hot is good but if you like it milder you use what you prefer)

4 ripe tomatoes , chopped (or use 1 tin of chopped tomatoes)

salt & pepper

Pour the stock into a large saucepan and add the sweet potato & onion . Bring to the boil and then reduce the heat and  simmer for  5 minutes .

Now add the spinach , garlic , chilli , curry powder, peas and tomatoes , stir well and cook over a medium heat for 10 minutes . the spinach should be nicely wilted and the potatoes should be tender.

Season with the salt & pepper . Serve hot with boiled rice  and Nan bread .

Now there is nothing hard about that meal !!! Treat yourself this week to this amazing curry !! Go on …
