Grilled Halloumi & Pea Salad

 

halloumiGrilled halloumi & Peas you say … Yummedy yum yum I say !!! It’s only as I’ve matured ( ahem!) that I’ve begun to appreciate the squeakiness of halloumi cheese …. Until recently the only time I had eaten it was when I was 19 and a boyfriend was trying to impress me .. it didn’t impress me and he was soon relieved of his boyfriendly duties … not because of the halloumi I hasten to add but I guess that didn’t help …

So here I am almost 20 years later only just entering the squeaky , salty delicious world of halloumi !! This recipe is one I’ve made a couple of times now and whilst isn’t so much a hit with the kids … Give em 20+ years I say … the husband  and are love it !! It is actually more than just grown up cheesy peas … honest guv !!! Here goes …

Grilled Halloumi & Pea Salad  (serves 4)

200g frozen peas

150g shelled broad beans

4 spring onions , trimmed & finely sliced

2 x 250g halloumi cheese ( cut each into 6 slices)

2 large handfuls of rocket

Dressing:

5 tbsp olive oil

Juice of 1 lemon

1 tsp caster sugar

1 clove garlic , finely chopped

salt & black pepper

1 tbsp fresh mint, finely chopped

1 red chili ,deseeded(if you wish) and finely chopped

Cook the peas in lightly salted boiling water  for 2-3 mins , drain , refresh under cold water and set aside.

Do the same with the broad bean !  Mix the peans , beans and onions together .

Now mix all the ingredients of the dressing today and set aside.

Grease a baking tray with oil and place the halloumi on it before placing under the grill. Grill each side of the cheese for 2 minutes until slightly browned.

Place the rocket on 4 plates , pop a spoonful of the pea mixture ontop of each rocket mountain . Now pop 3 slices of halloumi on top and drizzle with the dressing !!!

Get munching ! Healthy , filling and downright delicious ….

  1. Hooray for halloumi! I discovered a reduced-fat version in Sainsburys the other night… so now can eat twice as much?? It’s always a big feature on our BBQ 🙂 x
